Green Curry Chicken And Rice!
Be prepared to get asked to make this one again and again. This easy, healthy dinner has quickly become one of my favorites. It’s wonderful flavors and contains tons of veggies , lots of protein make this a dish your family and guests are going to love.
Ingredients
1 1/2 cups jasmine rice soaked for 30 minutes and rinsed.
1 1/2 lbs chicken thighs , boneless, skinless
Salt and pepper to season
2 Tbsp avocado oil
4 large carrots cut into 1/2 inch rounds
Florets from 1 large head of broccoli
1 small onion diced
3 cloves of garlic minced
1 inch knob ginger minced
4 Tbsp green curry paste
1 can coconut milk
1 1/2 cups chicken broth
Fresh lime juice
Cilantro
